Breakfast Casserole Supreme
1/2 stick butter
1 small sweet onion, chopped
1 small green pepper, chopped
2-3 medium tomoatoes (I don't put these in)
1 24-ounce bag frozen hash brown potatoes
12 eggs, beaten
1/2 to 1 pound cubed ham, thin sliced ham, cooked crumbled bacon or sausage
3 cups cheddar cheese
Directions:
1. Melt butter and place in bottom of 9"X13" baking pan
2. Spread potatoes (still frozen is okay) in the bottom of pan
3. Sprinkle chopped vegatables over potatoes
4. Add salt and pepper to taste
5. Sprinkle meat over potatoes
6. Note: At this point you may continue or casserole may be refrigerated overnight
7. Pour beaten eggs over potatoes
8. Bake 45 minutes
9. Remove from oven and sprinkle cheese ev3nly over top
10. Bake another 5-10 minutes or until cheese is hot and bubbly
Remove from oven and le set for approximately 5 minutes. Cut into 2 1/2" -3" squares and serve with spatula. You will find this recipe very forgiving and flexible. Change it to suit your taste. Guests love it. Serve along with sticky buns. It makes a breakfast that will stay with guests throughout their busy day of antiquing, hiking ro the like.

**I have adapted this many times over the last 8 years I have been making it. I especially love to add diced green chiles and zip up the cheese flavor. I never use three cups of cheese, always less. Also, I have subbed egg whites for half of the whole eggs and that works nicely, too. Those who know me well, know I am always tweaking things. Flax seed shows up in the most unexpected places.

Great idea, I've made something like this before though it didn't have the tomatoes. I love tomatoes, I'll have to put them in next time. This year we're again doing baked french toast. I mix it up the night before. The next morning it take it out of the fridge, pop it in the oven and it's ready by the time we're finished opening presents. :) Merry Christmas!
Yum...sounds wonderful and will certainly give it a go. Whitney is chef this year for Christmas breakfast and is fixing stuft french toast with fresh blueberries. She puts me to shame with her cooking and baking. Who knew? Merry Christmas to our dear Fitz friends!
